Grilled Shiitake Mushroom Skewers

5oz Shiitake Mushrooms Sliced
1 medium zucchini sliced
1 onion sliced large
1 sliced red pepper
2 bamboo skewers

Thread the vegetables alternately onto the skewers. Brush some of the marinade over the vegetables. Grill uncovered over medium heat for 10-15 minutes or until veges are tender. Turn and baste periodically.

We like to use a Spiedie Sauce as a marinade but here is a homemade option.

1/3 cup olive oil
2 tbsp lemon juice
1½ tsp dried basil
1½ tsp dried parsley
¾ tsp oregano
¾ tsp garlic
salt and pepper
