Beef and Mushroom Stir-fry

6 oz thin rice noodles
2 Tbsp canola oil
10 oz shiitake mushrooms sliced
8 oz green beans halved
1½ in piece fresh ginger sliced
¼ cup soy sauce
2 tbsp honey
1 tbsp cornstarch/mushroom powder
1 lb sirloin steak sliced ½ in thick
Place noodles in large bowl, cover with boiling water and let sit for 15 minutes. Drain and return to bowl. Meanwhile heat 1tbsp oil in a large skillet over med-high heat. Add mushrooms and cook for two minutes. Add green beans and cook until tender, 2-3 minutes. Add the ginger and mix together. Add vegetables to bowl with noodles.
In a small bowl whisk together the soy, honey and 1 tbsp water. In a medium bowl combine the pepper and cornstarch (mushroom powder will work plus add flavor). Coat the beef with this mixture. Add 1 tbsp oil to the skillet and heat at med-high. Add beef and cook until browned, about 2 minutes. Add the soy sauce mixture and cook until it begins to thicken, about 1 minute. Serve with the vegetables.
