Roasted King Oyster

  • 1lb Fresh King Oyster                                    
  • 4 Tbsp cold unsalted butter cubed          
  • ½ cup chicken stock                                    
  • ¼ cup olive oil                                              
  • Salt and Pepper

Preheat oven to 425.  Cut the mushrooms ¼ inch thick.  Arrange on rimmed baking sheet slightly overlapping.  Put the cubes of butter on the mushrooms.  Drizzel with stock and olive oil.  Season with salt and papper.  Roast for 50 minutes turing occasionally.  Mushooms should be tender and lightly browned.
