King Oyster "Scallops"

  • Stems of 4 King Oyster mushrooms rinsed and cut into 1 inch sections
  • 1 cup of vegetable broth
  • ¼ cup white wine
  • 1 Tbsp butter
  • 2 cloves of garlic
  • 1 shallot


Soak the mushrooms for 1½ hours in hot water.  Drain completely.  On medium heat place the mushroom stems on a skillet.  Add the broth and white wine.  Bring to a simmer.  Allow 12-15 minutes for the stems to completely absorb the liquid. 


Add the butter, garlic, and shallots.  Lightly brown the stems on each side (don’t burn them!)  Remove and serve over pasta.
