Shiitake Sauce

  • ¾ oz of Dried Shiitake 
  • 3 cups of water
  • 1 1/3 tsp sugar, salt, soy
  • 1 ½ tbsp cornstarch
  • ¼ cup of water

 Combine all the ingredients except the cornstarch and the ¼ cup of water.  Mix in a saucepan and bring to a boil.  Simmer for ½ hour.  Cook down to two cups and thicken with the cornstarch and water mix.  The smoky flavor is excellent on fish.
